Green Tea is a type of tea made solely with the leaves of Camellia Sinensis that has undergone minimal oxidation during processing. Green Tea has been subjected to many medical studies to determine the extent of its health benefits. Evidence suggests that regular green tea drinkers may have lower chances of heart disease, aiding weight loss and developing certain types of cancer. Scientists recently say Green Tea could protect the brain against forms of dementia.

Lung Ching (Dragon Well) - Is probably the most famous green tea in the world. Lung Ching means Dragon Well, and the tea derives its name from the beneficent dragon said to live in a local well. Lung Ching traditionally comes from the West Lake district of Zhejiang province, although much of the production has moved to the mountains around the town of Xinchang. Lung Ching is still made the way in which it has been for centuries by individuals hand-rolling the leaves in a hot, steep-sided pan. This is known as pan-firing. This method requires great care to match the temperatures with the size and tenderness of the leaves. Dragon Well has a large, flat leaf with a bright golden liquor that gives an exquisite mellow, floral character.
Gunpowder Pinhead - Most Gunpowder tea is produced in the Zheijian Province of China. After it has been pan-fired to de-enzyme it, the leaf is rolled into small pellets and then dried. The pellets actually look like lead shot or gunpowder giving the tea its name. These pellets come in different sizes the smaller the leaf plucked and rolled, the smaller the pellet. The tea grades range from tiny 'pinhead' gunpowder to larger 'peahead' gunpowder. The liquor has a greenish, dry golden appearance.

Japanese Sencha - Fukujya - Sencha green tea is made without grinding the tea leaves. Sencha tea is first steamed to prevent oxidation of the leaves. The tea leaves are then rolled shaped and dried before being fired to add flavour and aid in its preservation.This Tea is enhanced by covering the leaves with blankets as they grow in order to slow the growth and, therefore, pull up more nutrients from the soil. This produces a rich dark green liquor and full, slightly toasty flavour.
